Why is it called that?

  • Criaderas: These are the top rows of barrels containing the youngest wine, which is still ageing.
  • Solera: This is the bottom row, containing the oldest and most mature wine, ready for bottling.

Every time wine is bottled from the solera, it is replenished with wine from the criadera immediately above it, and so on, creating a continuous cycle.

Step 1: Organising the barrels
