A Palomino wine crafted in las Animas vineyard, farmed organically in the Pago Balbaína.

A unique process—perfected over generations in Jerez—where the wine matures for 15 months under flor in century-old chestnut bocoyes (700L casks). This aging imparts complexity, almond and toasted bread notes, along with saline and mineral nuances that enhance freshness, sapidity, and umami. These elements are elegantly balanced with the citrus and green apple tones characteristic of the Palomino variety.
